Who hasn't tried old fashioned potato soup at least once in their lives? If you're anything like me, the memory always comes back to that time of the week – Friday or Saturday night, and you are sitting there watching the ceiling fan while the pressure cooker boils away your first meal as a new Freezer Holiday cook. Maybe it was just that one time, but I can still remember it. The smell of the steam coming from the pot as the pressure rises, the spoon sinking into the hot potato, the butter melting on top as you stir, the way it coats your fingers and the way it tastes as it simmers.

A true southern comfort food, old fashioned potato soup has stood the test of time. It is healthy, delicious and has a place in every heart. It is so good, in fact, that I cannot imagine soup without it. Whether it's oatmeal soup, black-eyed peas, Buffalo wings, macaroni and cheese or other favorites, I can guarantee you that you will love it, and I promise you that others will too. The memories alone are enough to keep you coming back for more!

Of course, when you have old fashioned potato salad in your mind, there is no way you can help but make it. The great thing about this type of recipe is that there really isn't any one recipe that is considered to be “old fashioned.” In fact, you will find many variations of old fashioned potato recipes all over the internet.

While the recipe may differ slightly, the base ingredients are usually pretty much the same. You need potatoes (peeled and rind), onions (small handful), celery (another small handful), carrots (a larger piece), green beans (another larger piece), brown rice (half of a cup cooked), dried cranberries (a few fresh), and mayonnaise. There are many versions that call for Red Boat Beans, or lentils instead of carrots and beans, and various sizes of tomatoes. The variety of spices that you use really depends on personal preference. Some people like to use Cayenne pepper, while others prefer cinnamon.

Once you have gathered these items, you simply cook them in the slow cooker (or, if using a traditional stove-top grill, on the top rack of the grill) over medium heat, stirring occasionally. As the ingredients begin to brown, you can add seasonings or customize your own with your favorite flavors. Many times you can find spices in large quantity, such as dried oregano, thyme, etc… All you need to do is combine them in a bowl and then stir to mix.

After about an hour and a half, you are ready to serve. A great idea for an easy, delicious lunch or dinner is to serve the potato salad with a homemade cornucopia. Just cook the corn on the stove, and then add some low-fat sour cream, chopped peaches or watermelon rind, and you have a tasty and healthy side dish! Another idea for an easy dessert is to make pitas con chanaque. Just use canned pitas and fill them with refried beans, sour cream, and chana dal (or other low-calorie ingredients), bake in the oven, and serve with some crusty bread.
