Oatmeal cookies are absolutely delicious. However, they are not at all what you would call “healthy”. It is important that we remember that when it comes to cookies, there are good old boy cookies and bad boy cookies. And yes, there are raisins in them, too!

Good oatmeal cookies are light and fluffy, and have a lovely nutty flavor. One of my favorite ingredients when baking with eggs is baking soda. Baking soda helps draw out the flavors from the eggs and gives the cookies a nice sweet taste. I also like to use a teaspoon of cinnamon in my cookie batter, but feel free to substitute any spice for this. Another great thing about this is that you can buy ground cinnamon instead of buying the ground up spice. You can add other spices, such as cloves, just be sure to keep track of which spice you are using.

For the brown sugar, the key ingredients are applesauce, lemon juice, molasses, and baking powder. I like to mix these all together first, and then put the mixture into the oven. I let the cookies sit and dry for about five minutes before removing them from the oven. The brown sugar must not be overheated, or else it will curdle.

Another great combination for quick oats cookies is to mix the dry ingredients (oatmeal and brown sugar) into a bowl and then add in the wet mixture (water and baking soda). I usually do this with a tablespoon or two of each, and then work in one cup of chocolate chips. I bake the cookies on a greased baking sheet, but you can use any baking sheet that you like. Once the cookies are baked, I usually put them into my freezer for about an hour so that they are easy to break up. Then all I have to do is grab a fork and eat them!

If you are looking for a nutty cookie recipe, then you might want to try mixing walnuts, raisins, and oats together. You will need a cookie cutter to do this, or you can use a food processor. Mix the dry ingredients (oatmeal, brown sugar, molasses, apple juice, and baking soda) into the wet ingredients (water and chocolate chips).

Place about one tablespoon of each in each cookie. Bake on hot griddle until the cookies are done. If they don't stick, place them into trays in the oven and let cool. These cookie recipes are so popular, and they always taste better when they are served with some fresh fruit juice.
